Mini Sausage Feta and Red Pepper Frittatas

3/4 of a bag frozen tater tots, thawed

3/4 cup breakfast meat of choice

1/4 cup feta cheese

1/2 cup jarred roasted red peppers, diced

9 eggs

salt and pepper

Preheat your oven to 400 degrees. In a muffin tin spray with cooking spray and smash 5 tater tots into the sides to create a crust using a shot glass. Place the tater tot crusts in the muffin tin to bake for 20 minutes until crisp. Cook the breakfast sausage and dice the red peppers. Whisk the eggs together. Take the crusts out of the oven and fill with sausage, feta, and roasted red peppers in each crust. Fill the crusts with the whisked eggs. Place the muffin tray on a baking sheet and place in the oven for 20-25 minutes until the eggs are fully cooked. Let the frittatas cool for 10 minutes. Take them out of the muffin tin using an offset spatula or fork. Enjoy!
