Grilled Tomatillo Salsa Verde

10 tomatillos

1 small red onion

3 limes juiced

2 jalapeños, with or without seeds

4 garlic cloves

1/2 cup fresh cilantro

salt and pepper to taste

Start by firing up the charcoal on your grill. Once it is warmed up add the tomatillos, onion, jalapeños, and garlic. Cook them until they are well charred. To a food processor add lime juice, cilantro, and grilled vegetables. Blitz until smooth. Add salt and pepper and adjust seasoning as needed. Let the salsa cool in the fridge for 20 minutes. Serve along side tortilla chips or tacos and enjoy!
