Greek Orzo Salad

For Salad:

1 lb. orzo

1 pint cherry tomatoes

1 can quartered artichokes

1 bell pepper (red, orange, or yellow)

1 small red onion

1/4 cup pickled cherry peppers

1 cup feta cheese

2 tbsp. parsley

2 tbsp. dill

For Dressing:

1 clove of garlic, minced

1/2 tsp. salt

1/4 tsp. black pepper

1 tsp. Mediterranean seasoning

1/4 cup lemon juice

1/2 cup olive oil

Begin by cooking the orzo, following the directions on the bag. While the orzo is cooking, cut up the tomatoes, artichokes, bell pepper, red onion, and pickled cherry peppers into bite size pieces. Next, in a glass jar put all the ingredients for the dressing and shake it up. When the orzo is done cooking, drain it and immediately pour the dressing over the warm orzo. Add in all the bite size vegetables and mix well. Next add the dill and parsley and mix well. Fold in the feta. Eat warm or chilled.
