Creamy Corn Dip

1 1/2 cups frozen roasted corn, thawed, (I used Trader Joe’s)

8 ounces cream cheese, at room temperature

1/4 cup sour cream or yogurt 

1/2 cup mayonnaise 

1 cup crumbled feta cheese

1 tbsp. pickled jalapeño

2 scallions, chopped 

1/2 cup cilantro leaves, finely chopped

1 teaspoon ground cumin 

1 teaspoon chili powder

Kosher salt and freshly ground black pepper

1 bag blue corn tortilla chips

Place all the ingredients above (except tortilla chips) in a bowl. Mix them together well. Let sit in the fridge for at least 30 minutes before serving to let all the flavors meld. Serve with blue corn tortilla chips.

*I used Kite Hill Cream Cheese, Kite Hill Sour Cream, and Follow Your Heart Feta.*
