Egg Bites

12 eggs

1/4 cup of chives, finely chopped

1/2 cup cheese of choice (I used Parmesan)

1 cup of protein of choice (I used breakfast chicken sausage links)

2 cups mini tater tots

salt and pepper

Heat your oven to 350 degrees. Take a cupcake tin and grease it very well with cooking spray. Layer the bottom of each cupcake space with mini tater tots. I used 5 per cupcake space. Then beat one egg at a time and dump it over the tater tots in each cupcake space. Next put a heaping tablespoon of your protein on top of each egg bite. Then sprinkle 2 teaspoons of cheese and one teaspoon of chives over each one. Sprinkle salt and pepper over each egg bite. Place in the oven for 15-20 minutes or until the eggs are fully cooked. Then turn on broil and let the egg bites cook until golden brown on top. Mine took 3 minutes, but everyone’s broiler is different. Let cool for 10 minutes. Take each egg bite out of the cupcake tin to cool on a plate. Then take a bite!
