DGF Pancakes
DGF Pancakes
1 1/2 cups gluten free flour
2 tbsp. sugar
1 tbsp. baking powder
1 1/2 cups dairy free milk
1 egg
8 tbsp. dairy free butter
2 tsp. vanilla
Melt 5 tbsp. of butter and set aside. Heat a griddle up to medium while you make the batter.
In a large bowl combine the flour, sugar, and baking powder. In a smaller bowl whisk together the egg, vanilla, and milk. Once they are well combined add in the melted butter. Whisk well.
Add the remaining 3 tbsp. of butter to the hot griddle and spread it evenly over the cooking surface.
Add the wet ingredients to the dry ingredients, and mix until smooth. Spoon about a quarter cup of batter onto the griddle to start the pancakes. Flip once you see bubbles forming on top of the pancakes. Repeat for all the batter. Flip and enjoy!
