Carbonara
9 oz. Tagiatelle pasta
1 cup pancetta
2 eggs
2 egg yolks
1/2 cup parmesan
1/4 tsp. black pepper
1 clove garlic, minced
1/2 cup reserved pasta water
Boil water on the stove. Once water is boiling drop in pasta and cook according to the package. In a bowl whisk together the parmesan, eggs, egg yolks, and pepper. Set aside.
In a wide pan, brown and cook the pancetta. Take off the heat and add in the garlic. Once the pasta is cooked, drain and add on top off the pancetta. Keep the pan off the heat. Mix in the egg and cheese mixture to make a sauce and coat the noodles. Add pasta water as necessary to get your desired sauce consistency. Coat the noodles well and serve!
