7 Ingredient Trader Joe’s Green Goddess Quinoa Salad

1 cup quinoa

11 oz. (1 bottle) Trader Joe’s Green Goddess Dressing

3.53 oz. (1 package) sprinkles tomatoes, sliced in half

3 green onions, diced

1 red onion

1/2 cup apple cider vinegar

8 mini cucumbers

Begin by pickling your red onion. Place a sliced onion in a jar and add in the vinegar. Fill the rest of the way with water to cover the onions. Let the onions pickle for at least an hour. They will last for two weeks in the fridge. Place your quinoa in a sauce pan with two cups of water until cooked. Let the quinoa cool for 20-30 minutes. In a bowl, mix the quinoa with the green goddess dressing. Add in the tomatoes, green onions, pickled red onions, and cucumbers. Mix well. Serve up and enjoy!
