Taco Salad

For Dressing:

1/2 cup finely minced cilantro

1/2 cup vegetable oil

3 tbsp lime juice

2 tbsp. water

1 tbsp apple cider vinegar

2 tsp. honey

1 tsp. garlic salt

1/2 tsp. oregano

fresh black pepper

For Salad:

5 cups of spring mix

1 lb. ground turkey

1.3 oz. package of taco seasoning

1 1/4 cup of pico de gallo

1 orange bell pepper

1 1/4 cup of corn

30 pickled jalapeños

3 avocados (optional)

2 cups of corn chips. (optional)

Start by browning your ground turkey. Once it is browned add in taco seasoning packet. Allow the meat to cool and make dressing. Add all ingredients for dressing to a bowl and whisk well. Pour into a glass jar and set aside. Slice up your orange bell pepper and jalapeños. Get out 5 mason jars. Start by evenly distributing your cooled taco meat to the bottom of the jar. Then add 1/4 cup of pico de gallo to each jar. Next, evenly distribute the orange bell pepper amongst all 5 jars. Now add 1/4 cup of corn to each jar. Then add 2 tbsp. of chopped jalapeños to each one. Lastly, add 1 cup of spring mix to each jar. Place jars in the fridge. When it is time to eat, pour the salad into the bowl, top with avocado and crushed corn chips, and add dressing.
