Crispy Pork Fried Rice

1/4 cup plus 2 tbsp. soy sauce

2 tbsp. of sesame oil

6 cloves of garlic

1 inch of fresh ginger

1 lb. pork

3 cups white rice

2 bell peppers, any color

8 green onions

1 onion of your preference

8 oz. mushrooms

Olive oil

Preheat oven to 450 degrees. Start by cooking and browning the pork in a large pan or wok on medium high heat. While the pork is cooking dice the onion and bell peppers. After pork is fully cooked remove from pan and set aside. In the same pan begin sautéing the onion and bell peppers. Add a bit of olive oil if needed Once the onion and bell peppers are tender add in mushrooms. While the vegetables are cooking whisk together the soy sauce, sesame oil, garlic, and ginger. Once the mushroom are deeply brown in color, add rice. Pour the soy sauce mixture over the rice and stir the vegetable, sauce and rice to combine. Slice up green onions and add. Add the pork back in. Once everything is well incorporated and mixed, take the mixture and spread it on a sheet pan. Bake it in the oven at 450 degrees for 15 minutes until the rice starts to crisp. Once the rice has reached it’s desired crispiness, let cool and indulge.
