Broccoli Cauliflower Salad
2-3 cups chopped broccoli
2-3 cups chopped cauliflower
1/2 cup mayo
1/4 cup vinegar from pickled red onions
1/3 cup pickled red onions
1/3 cup chopped bacon
1-2 tbsp olive oil
salt and pepper to taste
pinch of sugar
apple cider vinegar
Start by slicing up your red onion. Put red onion in a glass jar. Cover red onion with apple cider vinegar just until all the onions are barely covered. Add in a sprinkle of sugar and salt and cover the jar. Allow onion to pickle for at least 15 minutes or overnight. Next combine broccoli, cauliflower, and red onions. Add in mayo and vinegar and coat the vegetables evenly. Add in olive oil and mix. Add salt and pepper to taste. Lastly fold in the chopped bacon. Enjoy!
