Triple Onion Potato and Bacon Soup

3 lbs. baby Yukon gold potatoes

1 onion

1 lb. of bacon chopped into bite size pieces

1 14 oz. can of coconut milk

2 quarts of chicken broth

1 cup chopped green onions

1 leek

3 tsp. salt

1 tsp. pepper

3 tsp. of garlic

olive oil

In a large soup pot cook the bacon until crispy. Leave the bacon fat in the bottom of the pot and remove the crispy bacon. Put the bacon on a paper towel and set aside. Next chop your onion, leek, and green onions. Add all the chopped onions to the pot and cook with the bacon grease. If the bacon grease is not enough for all the onions, add more olive oil. Cook the onions down until they are soft. While the onions are cooking, quarter the potatoes. When the onions are soft add in the potatoes,salt, pepper, and garlic. Stir until garlic is fragrant. Add in chicken broth. Cook until the potatoes are fork tender. Take two cups of potatoes and broth and blend it in a blender or with an immersion blender. Pour it back in the soup and add a can of coconut milk. Then add the bacon back into the soup. Let the soup simmer for 15 minutes, stirring occasionally. You can garnish the soup with more bacon and green onions. Ladle up and slurp :)
