Trader Joe’s Chipotle Pork Bowls
1 box Pulled Pork, precooked
1 bag frozen brown rice
1 red onion
1 bag shredded cabbage
3 green onions
1/4 cup mayo
1 cup white vinegar
1 cup water
1 container of Almond Chipotle Dip
Start by pickling your red onion. Slice it into half moon slices. Place it in a jar with half vinegar and half water. Place in the fridge for 30 minutes or up to overnight. Then slice your green onion. In a bowl, put the cabbage, green onions, and mayo. Mix together into a slaw. Let it sit for 30 minutes with the red onions. When 30 minutes is done you can microwave your rice for 3 minutes and the pulled pork. Once they are heated through you can assemble your bowl. Start with rice on the bottom. Layer on the pork, slaw, pickled red onions, and top with the almond chipotle dip. Grab a fork and enjoy!
