Creamy Calabrian Chili Pasta
16 oz. pasta
5 links of chicken sausage, sliced
1 onion
3 tbsp. tomato paste
1 tbsp. Crushed Calabrian chili peppers
1/4 cup heavy cream/heavy whipping cream
1/4 cup chicken broth
1/2 cup pasta water
1/2 cup feta
Cook your pasta according to the package. While the pasta is cooking, heat a large shallow pan and cook your onion until soft. Add in sliced chicken sausage to brown with the onion. Cook for 2 minutes or until the chicken sausage is light brown. Remove onion and chicken sausage from the pan and set aside. Add the tomato paste and crushed Calabrian chilis to the pan and cook for two minutes. Then add the chicken broth and let about half of it cook off. Then add heavy cream. Mix and heat for one minute and turn off the heat. Reserve 1/2 a cup of pasta water. Drain the rest of the pasta. Add the pasta to the sauce. Add pasta water as need to create a sauce that completely coats all the noodles. Once all the noodles are well coated, add back in the chicken sausage and onion and mix well. Top with feta and enjoy!
