Trader Joe’s Buffalo Shrimp Tacos

12 corn tortillas

18-20 Trader’s Joes Gluten Free Breaded Shrimp

1 cup broccoli slaw

1/4 cilantro, minced

1 red onion

1-1 1/2 cups apple cider vinegar

1/2 cup Trader Joe’s Vegan Buffalo Sauce

Start by pickling your red onions. Slice the onion in half moons and place in a glass jar. Fill jar until the onions are all submerged in vinegar. Cook the shrimp according to the directions on the bag. While the shrimp are cooking, assemble your slaw. Add broccoli slaw, 1/4 cup pickled red onion, and cilantro to the bowl. Add 1 tbsp. of vinegar from the pickled red onions. Add 2 tbsp. olive oil. Add salt and pepper to taste. Allow slaw to stand while the shrimp finish cooking. Warm up your tortillas so they are pliable. Once the shrimp are finished cooking you can begin assembling your tacos. Place a layer of slaw on the bottom of each taco. Add the Trader Joe’s Vegan Buffalo Sauce to the top of the slaw. Top with 3-4 shrimp a taco. Add more sauce. Garnish with pickled red onions and cilantro. This makes 6 tacos using two corn tortillas a taco. Enjoy!
