Thai Peanut Chicken Bowls

For the Sauce:

1/4 cup peanut butter

2 tbsp. peanuts

1 tbsp. fresh cilantro

2 tsp. fresh ginger, grated

2 tsp. garlic, grated
2 tbsp. tamari

2 tbsp. rice vinegar

2 tbsp. brown sugar

1 tbsp. sambal chili sauce

1/2 cup water

For the bowls:

1 rotisserie chicken

1 cup grated carrots

1 cup sliced cucumbers

2 cups chopped red cabbage

1/2 cup green onions

1/4 cup chopped cilantro

1/4 cup pickled red onions

1/4 cup peanuts

sriacha (optional)

1 1/2 cups white rice

Cook your white rice. In a blender blend together all the ingredients for the peanut sauce. In a shallow bowl place a layer of white rice, then chicken, then all the vegetables and peanuts. Drizzle over the peanut sauce. Drizzle over the sriracha if desired. Mix together all the components in the bowl and enjoy!
