Salmon Bowls
For the marinade:
1/4 cup olive oil
3 tbsp. tamari soy sauce
2 tbsp. maple syrup
2 tbsp. dijon
1/4 tsp. black pepper
For the bowls:
1 lb. salmon
1 cup white or brown rice
1 avocado
1/2 an English cucumber, sliced
1/4 cup grated carrot
1/4 cup pickled red onions
1/4 cup sliced green onions
1 sheet of nori
furikake, optional, for garnish
sriracha mayo, optional, for garnish
Whisk together all the ingredients in the marinade. Marinate the salmon for 30 minutes to an hour. Cook the salmon in the air fryer at 400 degrees for 10 minutes or in the oven at 450 degrees for 15-20 minutes. Cook your rice according to the package. Once the salmon is fully cooked break it into chunks. Assemble your bowl. On the bottom of the bowl place the rice. Put the salmon on top. Layer the bowl with carrot, onions, avocado, and cucumber, and broken up pieces of nori. Garnish with furikake and sriracha mayo.
