Quick Chilaquiles
1 1/2 cups salsa
8 corn tortillas
1 cup vegetable oil
4 eggs
1 avocado
1/3 cup feta
In a shallow pan heat one cup of vegetables oil. Fry the corn tortillas until crisp. Let cool. Break the corn tortillas up into chip like pieces. In a shallow frying pan dump in your salsa. Heat it until it simmers. Add in the crisp tortillas. Let them soften a bit. In a separate pan cook eggs sunny side up and leave the yolk runny. Add the eggs on top of your salsa and tortillas. Dice an avocado. Evenly spread it across the top of the chilaquiles. Do the same with the feta. Dish up and enjoy!
