Pumpkin Bars

2 cups flour

1 tsp. xanthan gum (optional, use if your are making them gluten free)

2 tsp. cinnamon

1 tsp. pumpkin pie spice

2 tsp. baking powder

1 tsp. salt

1 tsp. baking soda

4 eggs

1 2/3 cup sugar

1 15 oz. can of pumpkin

1/2 cup vegetable oil

1/2 cup unsweetened applesauce

1/2 tsp. pure vanilla extract

Frosting:

1/2 cup butter, softened

3 oz. cream cheese, softened

1 tsp. vanilla extract

2 cups powdered sugar

Preheat your oven to 350 degrees.

In a small bowl, whisk together flour, xanthan gum (if needed), cinnamon, pumpkin pie spice, baking powder, salt, and baking soda. Set aside.

In the bowl of your mixer, beat the eggs, sugar, oil, applesauce, pumpkin, and vanilla extract until light and fluffy.

With the mixer on low, add the flour mixture. Mix just until the flour is mixed in.

Spread in a greased 9 x 13 pan.

Bake at 350 for 35-45 minutes or until toothpick inserted in the center comes out clean.

In a small mixing bowl, use a hand mixer or stand mixer to beat together the frosting ingredients until well mixed.

Frost the bars once they have cooled completely.

Refrigerate until ready to serve.

* I used King Arthur Gluten Free All Purpose Flour, Kite Hill Dairy Free Cream Cheese, and Country Crock Plant Butter. *
