Mom’s Potato Salad

1.5 lbs. red potatoes

4 chopped hard boiled eggs

1/4 cup chopped green onions

1/3 cup mayo

1 tbsp. dijon mustard

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. white pepper

1 tsp. dried dill

1 tbsp. tarragon vinegar

1 tbsp. white vinegar

Start by putting the red potatoes in a large pot with cold water, bringing them to a boil. Boil the red potatoes until they are fork tender. While the potatoes are boiling begin mixing the dressing together. Add in the mayo, mustard, spices, and vinegars to a large bowl. Mix together well. When the potatoes are done, rinse them in the sink under cold water and allow them to cool for ten minutes. Cut the potatoes into bite sized pieces. Add your warm potatoes to the dressing and coat them well. Fold in the chopped hard boiled eggs. Mix in the green onions. Allow the potato salad to chill in the fridge for 2 hours to overnight. Serve up and take a bite!

*To make tarragon vinegar simply place fresh tarragon in a bottle and fill it with white distilled vinegar. After a week it is ready.
