Lox and Chive Cream Cheese Omelette

2 eggs

1 tbsp. butter

1 1/2 tbsp. chive cream cheese

2 tbsp. lox, diced

1 tbsp. green onion, sliced

1 tbsp. tomato, diced

salt and pepper to taste

Place butter in a skillet and allow it to totally melt and coat the skillet. Crack and whisk together two eggs. Salt and pepper the eggs. Add to the hot skillet. Once the eggs are about halfway cooked add in your toppings. First the cream cheese so it can melt a bit, next the green onions and tomatoes, and last the lox. Once the egg is fully cooked flip the omelette over on itself to create its shape. Scoop it out of the skillet and onto a plate. Garnish with more green onions, lox, and tomatoes. Serve up and enjoy.
