Italian Grinder Sandwich

For the Sub

2 slices deli style bread

2 oz. thinly sliced deli ham

2 oz. thinly sliced deli Sopprasetta

2 oz. thinly sliced deli Genoa salami

2 oz. fresh mozzarella

For the Grinder Salad

1 tbsp. mayo mayonnaise

1 tsp. red wine vinegar

1/8 tsp. fresh cracked black pepper

1/8 tsp. teaspoon dried oregano

1/8 tsp. teaspoon red chili flakes

2 tbsp. sliced pickled cherry peppers

1 tbsp. medium red onion , thinly sliced

1/2 cup romaine lettuce chopped

Sandwich Toppings

1 tbsp. red pepper pesto (I got mine from Trader Joe’s)

1 slice beef steak tomato

More mayo if desired

Toast bread. On one side of the bread spread on red pepper pesto. On top of the pesto layer on all the sandwich meats and mozzarella cheese. Place tomato on top of the mozzarella. In a small bowl combine mayonnaise, vinegar, pepper, oregano, and chili flakes. Add in the cherry peppers, red onion, and lettuce and toss in the dressing. Add it to the top of the sandwich on top of the tomato. Add a layer of mayo to the top piece of bread and close the sandwich. Cut in half and enjoy.

*I used Schar Deli Style Gluten Free Sandwich Bread, Miyokos Dairy Free Mozzarella, and Trader Joe’s Organic Roasted Red Pepper and Almond Pesto Sauce.*
