Greek Chicken Bowls

For the Chicken Marinade

2 chicken breasts

1 cup greek yogurt

2 tbsp. olive oil

4 cloves minced garlic

1 1/2 tsp. oregano

2 tbsp. lemon juice

1/2 tsp. salt

1/2 tsp. black pepper

For the Tzatziki

1/2 cup greek yogurt

2 minced garlic

3 tbsp. lemon juice

1/2 tsp. oregano

1/4 tsp. dill

1/4 tsp. parsley

1/4 tsp. onion powder

For the Bowl

1/2 cup chopped sweet mini peppers, sliced

1/2 cup grape tomatoes, sliced

1/2 cup pickled red onion

1/2 cup feta

2 cups Banza chickpea rice

Preheat the oven to 450 degrees.  Mix all the ingredients together to make the marinade and add the chicken,  Marinade the chicken for 30 minutes.  Place in a glass pan and cook for 35-45 minutes until the chicken reads 165 degrees internally.  While the chicken is cooking make the tzatziki.  Mix the yogurt, garlic, lemon juice, and spices together and set aside.  Slice your peppers, tomatoes, and onions.  When the chicken is 10 minute from being done, cook the chickpea rice.  

Assemble the bowl, place the rice on the bottom.  Add in the vegetables, chicken, feta and tzatziki.  Take a bite!
