Jam and Mushroom Bites

1 sheet puff pastry

1/2 a red onion

1/4 cup red wine

Salt and pepper

1/2 Cremini mushrooms, finely diced

1/2 cup white mushrooms, finely diced

1/4 tsp. Dried sage

1/4 tsp. Dried thyme

Olive oil

Begin by preheating your oven to the temperature required by your puff pastry instructions. Take a mini cupcake tin and spray with cooking spray. Place small 1x1 inch squares of puff pastry into the mini cupcake tin and bake for 10 minutes. Take puff pastry out of the oven and let it cool and set aside. While the pastries are baking, finely slice 1/2 a red onion. Add olive oil to a pan and sauté the onion. Add salt and pepper. Sauté for 15-20 minutes until softened. Once the onion is softened add red wine. Cook until the wine has evaporated. Transfer red onions to a blender and blend until smooth. Set the jam aside. Finely dice both types of mushrooms. In the same pan you sautéd the onions, sauté the mushrooms in olive oil. Sauté until mushrooms are fully cooked. Add in spices. Mix well. Set the pan aside to let the mushrooms cool. Once the jam and mushrooms are cooled you can begin assembling each bite. Scoop a teaspoon of jam into each puff pastry shell and fill the rest with the mushrooms mixture. Repeat for all shells. Place back in the oven at 350 for 10 minutes. Take out of the oven and serve warm.
