Elote Rice Salad

For Rice:

1 1/2 cups uncooked rice

3 cups vegetable broth

For Dressing:

1 1/2 cups plain yogurt (optional to sub in 1/2 cup of mayo and 1 cup yogurt)

3 limes juiced

1 1/2 tsp. cumin

1 1/2 tsp. paprika

1 1/2 chili powder

1/4 tsp. cayenne

For Salad:

1 cup cilantro chopped

6 green onions

4 cups fire roasted corn

1 cup feta

Make your rice, and allow it to cool while you chop the vegetables and make the dressing. In a small bowl mix together the yogurt, lime juice, and spices. In a large bowl add in the rice, corn, green onions, and cilantro. Mix well. Pour in the yogurt dressing and coat everything well. Fold in the feta. Serve up and enjoy!
