Buñuelo Inspired S’Mores

1/4 cup sugar

1/2 tsp. cinnamon sugar

8 corn tortillas

1/2 cup vegetable oil

chocolate bar of choice

4 marshmallows

Mix the cinnamon and sugar together in a shallow bowl or on a plate and set aside. Heat vegetable oil in a shallow pan. While the oil is heating, cut the corn tortillas into 8 identical circles using a cooking cutter or a glass. When the oil is ready, place the tortillas in the oil until crisp and lightly golden brown. Pull from the oil and let any excess drip off and then immediately coat with cinnamon sugar. Repeat for all tortillas. Break your chocolate into 4 equal pieces. Roast 4 marshmallows. Assemble each s’more by sandwiching two cinnamon sugar tortillas with a piece of chocolate and marshmallow in the middle. Delectable!

* I used Lindt Oat Milk chocolate, you can also use canned chocolate frosting if you cannot find dairy free chocolate.*
