Quick Twice Baked Potato

2 Russest potatoes

1/2 sour cream

2 tbsp. mayo

1/4 cup chives or green onions

1/4 cup bacon chopped

1/2 cup cheese of your choice

salt and pepper

Preheat your oven to 375 degrees. Poke both potatoes with a fork all over to create lots holes. Put in the microwave for 10 minutes. Let the potatoes cool. Cut them in half. Scoop out the inner part of the potato and put it in the bowl. Set aside the skins. In the bowl with the inner part of potato, add the sour cream, mayo, chives/green onions, bacon, cheese. Mix until well combined. Salt and pepper the mixture to taste. Scoop the filling into the potato skins. Place on a greased baking sheet and cook for 15-20 minutes in the oven. Let cool and enjoy!
