Pickled Red Onion “Cheesy” Potatoes
Pickled Red Onion Cheesy Potatoes
20 oz. shredded potatoes
1/4 cup laughing cow cheese or flavored cream cheese (I used garlic and herb)
1/2 cup plain yogurt
1/4 cup mayo
1/2 cup shredded cheese of choice
1 tsp. pepper
1/2 cup green onions
1/2 cup pickled red onions
Preheat your oven to 400 degrees. In a large bowl add shredded potatoes, laughing cow/cream cheese, yogurt, and mayo. Mix well. Add in shredded cheese, pepper, green onion, and pickled red onion. Mix well. In a greased baking dish, evenly spread the shredded potato mixture. Bake in the oven for 20-25 minutes. Broil for 2-3 minutes to make the top crispy. Let cool for 5 minutes and serve!
