Mustard Sauce Pork Ribs

3 racks of pork ribs

Rib Spice Rub:

1/2 cup brown sugar

1 tbsp. paprika

1 tbsp. black pepper

1 tbsp. salt

1 tbsp. chili powder

1 tbsp. garlic powder

1 tbsp. onion powder

1 tbsp. cumin

1 tsp. cayenne pepper

1 tsp. white pepper

Mustard Sauce:

1 cup prepared yellow mustard

1/4 cup vinegar

1/4 cup brown sugar

1/4 cup honey

black pepper to taste

Coat the ribs with the spice rub. Fill the bottom of your slow cooker (like a Nesco) with a quarter inch of water. Place your rack in the water. Put your ribs on the rack. Be sure they aren’t touching the water. Cover the ribs with tinfoil or a lid and cook at 225 degrees for 4 to 4 1/2 hours. Once the ribs are done in the slow cooker, place them on a grill, bone side down, and sear. Flip and sear the other side. Take them off and brush on the sauce. Place back on the grill until the sauce is warmed through. Let them rest for 5 to 10 minutes. Slice up and serve.

If you prefer, you can also do the same process in the oven. After 4 to 4 1/2 hours, turn the oven to broil (500 degrees) and do the same process described above on the grill.
