Make Ahead Sausage and Egg Breakfast Sandwiches DGF

3 bag of Trader Joe’s Gluten Free English Muffins

12 eggs

12 breakfast sausage patties, sandwich size

Preheat your oven to 375. Crack 12 eggs into a large bowl. Add salt and pepper. Whisk well. On a greased half sheet pan, pour the egg mixture. Place in the oven for 15 minutes. While the eggs are cooking, heat a cast iron pan and place the english muffins in the dry cast iron pan. Toast each side of the english muffin. Slice the english muffins in half. On the top piece, spread the herb and garlic cashew cheese. On the bottom piece place a sausage. Repeat for all 12. After 15 minutes check and see if the eggs are firm. If not, cook for a few minutes until they are firm. Let them cool for 5 to 10 minutes. Slice into 12 equal pieces. Place the egg squares on top of the sausage. Place the top on the english muffin. Wrap the sandwiches in foil and freeze. Pull out of the freezer and microwave for 1-2 minutes or place in a warm oven at 350 for 10-15 until they are warmed through. Enjoy. This recipe makes 12 sandwiches.
