Feta and Sundried Tomato Pesto Pasta
1/2 cup almonds
1 cup sun dried tomatoes
2 cloves garlic
3/4 cup parmesan
1/4 tsp. pepper
1/4 tsp. red pepper
1/2 cup olive oil
6 oz. feta
4-5 chicken sausages, sliced
1 lb. bowtie pasta
Place a 6 quart pot of water on the stove to bring to a boil for the pasta. While you are waiting for the water to boil, make your pesto. In a food processor add almonds, sundried tomatoes, garlic, parmesan, pepper, and red pepper. Blend for 30 seconds. Drizzle in the olive oil. Blend again until well combined. Once the water is boiling, add pasta and cook to al dente. Reserve 1 cup of pasta water. Drain the noodles, add them back in the pot. Add the pesto. Add a little bit of pasta water at a time until the pesto has created a nice sauce that sticks to the noodles. Add the feta and chicken sausage. Mix well and serve. Enjoy!
