Easy Chili
Easy Chili
2 tbsp. olive oil
1 lb. ground turkey
1 onion
14 oz. can crushed tomatoes
1 15.5 oz. can kidney beans
2 cloves of garlic
1/2 chipotle pepper in adobo, chopped
1 tbsp. chili powder
1 1/2 tsp. cumin
1 1/2 tsp. paprika
1/4 tsp. cayenne
1 tsp. tomato paste
3/4 cup beef broth
salt and pepper to taste
for garnish, fritos, sour cream, scallions, onion, cheese
In a large pot over medium high heat add 1 tbsp. olive oil and ground turkey until it is browned all the way through. Transfer to a plate. Add another tbsp. of oil to the pot. Add in the onions and cook until softened. Add the chipotle in adobo and cook for three minutes. Add the garlic, tomato paste, and spices. Cook until the garlic is fragrant. Stir in beef broth and crushed tomatoes. Bring to a boil. Add the turkey and the beans and their liquid. Let simmer for 30 minutes. Season with salt and pepper as needed. To serve garnish with any of the above options. Take a bite and enjoy!
