Breakfast Hand Pies

1 Package Sweet Loren’s Puff Pastry

5 eggs

1/2 pound ground breakfast sausage

Plant Based Laughing Cow Cheese Alternative

salt and pepper

Preheat the oven to 425 degrees. In a skillet cook your breakfast sausage. Scoop out of the pan onto a plate and set aside. Scramble 4 eggs in a bowl. With the remaining sausage grease cook the eggs. On a sheet pan roll out the puff pastry and cut in half width wise. Spread on the laughing cow to half of each of puff pastry. Layer on breakfast sausage and scrambled eggs. Fold over the other half of the puff pastry and cover all the toppings. Use a fork to crimp the edges. Use a paring knife to cut a few slits in the top of the pastry. Whisk one egg with a dash of water. Brush an egg wash over the top of both hand pies. Place in the oven for 15 minutes or until the pastry is golden brown. Allow the hand pies to cool for 5-10 minutes and enjoy!
