Breakfast Bowl

2 cups frozen shredded hashbrowns, thawed

1-2 tbsp. olive oil

salt and pepper

4 chicken sausages

4 eggs

1/4 cup pickled red onions, sliced

1 avocado, sliced

hot sauce- optional

Preheat your oven to 450 degrees or the air fryer to 400. In a bowl mix the hashbrowns, olive oil and salt and pepper. Place in the oven for 30 minutes or air fryer 10-15 minutes or until crispy. In a nonstick skillet, cook 4 eggs in any style you like. I did over easy. Heat your chicken sausage in the skillet or microwave. Once everything is cooked and warmed up you can make your bowls. Place the hashbrowns on the bottom of the bowl. Top the hashbrowns with two eggs and two chicken sausages. Add in avocado and pickled red onions. Top with hot sauce if you’d like. Dig in!

This makes 2 breakfast bowls.
