Lamb and Quinoa Grain Bowls

Ingredients

1 lb. of lamb

1 cup uncooked quinoa or two cups cooked

1 tbsp. olive oil

1/4 cup diced red onion

4 cloves of garlic, finely minced

1 tsp. paprika

1 tsp. allspice

1/2 tsp. red pepper flakes

1/4 tsp. ground ginger

salt and pepper to taste

1/2 a red onion sliced into half moons

1 cup apple cider vinegar

sprinkle of salt and sugar

1 avocado

1 cucumber

1 carton of cherry tomatoes

1 container of tzatziki- I used Good Food Plant Based tzatziki

1 container of hummus


Start by cooking your quinoa.  While it is cooking, slice up 1/2 of your red onion.  Put red onion in a glass jar.  Cover red onion with apple cider vinegar just until all the onions are barely covered.  Add in a sprinkle of sugar and salt and cover the jar.  Put in the fridge while continuing to cook.  When quinoa is done cooking, transfer to a bowl to allow it to cool.

Heat olive oil in a shallow skillet and add in ground lamb and the 1/4 of a red onion.  When lamb is halfway done browning add in all the spices and garlic.  Allow lamb to completely brown.  While lamb is cooking or after it is done, slice cucumbers into half moons, slice cherry tomatoes in half, and cut avocado into slices.  Set lamb aside.

Once everything is ready for assembly place quinoa on the bottom of a bowl.  Add lamb on top.  Add in tomatoes, cucumber, pickled red onions, and avocado.  Drizzle over tzatziki and put a dollop of hummus in the bowl.  


This makes 2-4 servings.  It can be eaten hot or cold.
